The U.S. Department of Agriculture maintains robust statistical collection and analytical capabilities and is typically the best place to find the answers to questions like these.
Wheat Briefing Room
USDA’s Economic Research Service’s Wheat Briefing Room is a central location for the department’s excellent wheat resources.
A key offering is the Wheat Backgrounder, last updated in late 2005, this document gives a good overview of wheat production, trade, farm economics and competitiveness.
The USDA Wheat Yearbook Tables give quick access to a variety of industry stats including in the following categories:
